Cinnamon French Toast Topped with Fresh Fruit

Get out your stale bread and maple syrup for this gorgeous breakfast classic that’s sure to elevate your morning. Add a favorite late summer fruit or something you preserved to this cinnamon french toast for a moment just like this and you’ll have the perfect lazy Sunday breakfast for two.

Ingredients

Cinnamon French Toast

  • 1 1/2 Tbsp coconut sugar
  • 1/2 tsp cinnamon
  • 2 large eggs
  • 1/2 c milk
  • 1 tsp vanilla
  • Butter or coconut oil
  • 4 slices of bread (ideally brioche)

Fruit Topping

  • Fruit of choice (peaches, apricots, berries)
  • 1 Tbsp coconut oil
  • 1/2 tsp cinnamon

Instructions

  1. In a shallow bowl whisk together coconut sugar and cinnamon.
  2. Add the eggs, milk, and vanilla and whisk again until frothy.
  3. Heat a pan over medium high heat with a bit of butter or coconut oil.
  4. Quickly dip the bread into the egg mixture for about 2-3 seconds each side.
  5. Place bread onto the pan and cook for about 1.5-2 minutes and gently flip over until both sides are golden brown and crisped.
  6. Repeat with all pieces and let cool slightly while making the fruit topping.
  7. In the hot pan with a bit of oil or butter, cook the fruit gently and sprinkle some cinnamon over the top.
  8. Serve alongside or atop the french toast and drizzle some maple syrup. Enjoy!

Recipe Notes and Variations

  • To avoid soggy or flat French toast, make sure your bread slices are nice and thick. Take care not to over-soak the bread in the egg mixture. Make sure the pan is appropriately hot before cooking the toasts. Gently flip each piece in the pan—no fancy air flipping!
  • Try pulling out this recipe when you have stale bread (it happens to us all!). Not only will you be preventing food waste, your French toast will be crispier and less likely to get soggy.
