5 Healthy Breakfasts that will get you out of Bed Before Lunch

New year, new you starts with a healthy breakfast. It’s the first meal of the day, and it sets the tone for the rest of the year. Just kidding, that’s way too much pressure. For breakfast, just think fruit and veggies, protein-packed, and most importantly, delicious. Or else, why even bother? You might as well skip it and just have lunch. 

Try out a few of our favorite breakfasts to ring in the New Year. 

Sweet Potato, Kale & Chorizo Breakfast Hash

Sweet Potato, Kale & Chorizo Breakfast Hash

Savory breakfast lovers, this one’s for you. This breakfast hash is great for Sunday mornings when you have a little extra time to tend to your potatoes. Or, you could make a big batch and enjoy it for breakfast all week. You can easily make this recipe with classic chorizo, but if you’re a vegetarian or just want to eat less meat in 2021, then enjoy this vegan breakfast with Upton’s Seitan Chorizo.

Leftover Tortilla Chip Migas

Migas are a Tex-Mex breakfast staple that combines scrambled eggs with spices and crispy tortilla chips. This simple recipe is a tasty way to use up the odds and ends at the bottom of a bag of tortilla chips or even the leftovers from last night’s dinner. Just add eggs, cheese, crunchy tortilla chips, and that roasted squash from last night’s dinner to a pan, and you’ve got something brand new.

Not everyone’s in the mood to cook first thing in the morning. Or really at all. If turning on your stove before noon sounds ghastly, then you really can’t beat a simple breakfast of fruit, nuts, yogurt, and granola. Just be careful about which granola and yogurt you pick. Many are disguised as healthy but are about as sugary as a jelly donut. 

Overnight Oats with Juicy Mango

Overnight Oats with Juicy Mango

In a glass jar, combine 1/2 cup of oats, two tablespoons of chia seeds, 1/4 cup of chopped dried mango, and enough almond or oat milk to cover the oats. Leave it in the fridge overnight, and in the morning, a creamy and delicious breakfast will magically appear. The milk blooms the chia seeds and makes the oats fluffy, but honestly, the best part is the spoonfuls of juicy mango. Top with pecans and drizzle with honey.

Cinnamon Apple Oat Muffins for a healthy breakfast

Is it too soon to call 2021 the year of the cinnamon apple oat muffin? Fresh from the oven, these muffins are equal parts comforting and energizing. So basically everything you want in a tasty little package. Make them in big batches to feed your family or feed yourself for the week. We recommend adding chopped almonds to the topping for more protein and swapping in Miyoko’s butter for a dairy-free topping. 

A Coffee that Lives up to it’s Name

What do all of these delicious healthy breakfasts have in common? They all go great with our Anytime Blend Coffee! But then again, what doesn’t?

Vegetarian box and also an option to tryout and quit if necessary. Also why is the total more than the price of the box?
