Japanese Fruit Sandwiches

Classic Japanese fruit sandwiches are typically made with soft, fluffy milk bread and any variety of colorful fruits like grapes, melon, or mango. But as any true sandwich artist knows, the sandwich does not choose the ingredients, the wand chooses the wizard, or wait, no, we mean the ingredients choose the sandwich.

Ingredients

  • 6 slices Imperfect Foods Whole Wheat Bread
  • 16oz heavy whipping cream
  • 2 Tablespoons sugar
  • 1-2 oranges, peeled
  • 2 kiwis, peeled
  • 6 small strawberries

Directions

  1. Keep your strawberries whole, and slice oranges and kiwis into sizes that are about the same size as the whole strawberries.
  2. With an electric mixer, whip heavy cream and sugar together on high until soft peaks form. Use a knife to spread a thin layer of whipped cream evenly over one slice of bread.
  3. Assemble fruit on the slice of bread. Place a strawberry, kiwi piece, and orange piece in a line going from one corner to the diagonal corner. When you cut the sandwich in step 7, this is where you will cut. Cover the rest of the slice of bread with more fruit pieces.
  4. Add whipped cream over the top of the fruit and fill any space between fruit pieces. Place a second slice of bread on top. Repeat the process for the remaining pieces of bread.
  5. Wrap sandwiches tightly with beeswax wraps. Use a long piece of washi tape to mark where you will be cutting the sandwich.
  6. Chill sandwiches for at least 2 hours or overnight. Flip sandwiches over after 1 hour of chilling.
  7. Remove sandwiches from the refrigerator when ready to serve. Use a sharp bread knife to slice the crusts off the bread, if desired. Slice the sandwiches in half. Serve immediately.

Recipe Notes and Variations

  • Classic Japanese fruit sandwiches use cling film instead of beeswax wrap to seal them. This or a cloth napkin folded shut around the sandwich would work if you don’t have beeswax wraps.
  • Similarly, if you don’t have washi tape, you can use something else to mark them, like a washable marker. Or you can just hope that you’ll remember which side to cut.
