Tim Tams (Australian Chocolate Sandwich Cookies)

Tim Tams are one of Australia’s most popular exports so we recommend making a double batch of these cookies accordingly. Two crispy chocolate biscuits are filled with a spread of malted chocolate cream, sandwiched together, and then dipped in melted chocolate. Since you probably don’t have too many go-to recipes using malted milk powder, use any leftovers to make this beloved malted chocolate cake.

Ingredients

For the biscuits

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • ⅓ cup Imperfect Foods Unsweetened Cocoa Powder
  • 1 cup all-purpose flour
  • ½ tsp kosher salt

For the filling

  • ½ cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 tbsp Imperfect Foods Unsweetened Cocoa Powder
  • 1 tbsp malted drink powder

For the chocolate coating

  • 1 cup Imperfect Foods 60% Chocolate Discs
  • 1 tbsp Imperfect Foods Coconut Oil

Directions

  1. Make the cookies. Beat together ½ cup butter and sugar until fluffy and light in color. Add egg and vanilla and beat until fully incorporated and batter is light in color. Add cocoa powder and mix well.
  2. Mix in flour and salt on low speed until fully incorporated. Dough will be soft.
  3. Place a piece of parchment paper on the counter and transfer dough onto the paper. Top with another piece of parchment and roll dough out into a 17.5 x 5 inch rectangle, about ¼ inch thick. Chill dough in the refrigerator for 2 hours or in the freezer for 30 minutes.
  4. Preheat oven to 350℉. Line two cookie sheets with parchment paper.
  5. Remove dough from the refrigerator and slice dough into 1.25 x 2.5 inch rectangles. Place cookies on a cookie sheet, about 1-2 inches apart. Bake for 10 minutes, then transfer to a wire rack to cool completely.
  6. Make the filling. Sift together the powdered sugar, cocoa powder, and malted drink powder into a medium bowl. Beat butter until fluffy. Add powdered sugar mixture and beat until light and fluffy. Spread a heaping tablespoon of filling evenly on half of the cookies. Place the remaining cookies on top. Chill in the refrigerator for 5-10 minutes.
  7. Make the coating. Place chocolate discs and coconut oil in a small, microwave-safe bowl and microwave in 30-second intervals, stirring after each time. Continue until everything is fully melted.
  8. Remove cookies from the refrigerator. Use a fork to fully dip the cookies in melted chocolate. Place dipped cookies back on a lined cookie sheet to set. Repeat until all cookies are covered. Drizzle additional chocolate coating with a fork over each of the cookies. Let chocolate fully set. Serve and enjoy!
