Chocolate-Dipped Matcha Shortbread Cookies

Chocolate and matcha are a match made in dessert heaven. These Chocolate-Dipped Matcha Shortbread Cookies are tender with a perfect balance of sweetness and earthiness. Plus, they’re naturally green, so they’re already dressed up for the holidays!

You can find matcha at most supermarkets or online. Be sure to save any leftover matcha to enjoy in a comforting bowl of our Matcha and White Chocolate Popcorn.

Makes 36 cookies

Ingredients

  • 2 cups all purpose flour
  • 2 tbsp matcha green tea powder
  • 1 tsp salt
  • 1 cup (2 sticks) butter, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • ¾ cup Imperfect Foods Not-Your-Average Semi-Sweet Chocolate Chips

Directions

  1. In a medium bowl, sift together flour, green tea powder, and salt. Set aside.
  2. In another medium bowl, beat together butter and powdered sugar on medium speed, until fluffy and lighter in color. Add vanilla and beat until combined.
  3. Add flour mixture and mix until dough just comes together.
  4. Turn dough out onto a sheet of parchment paper and form into a log about 2 inches thick.
  5. Wrap dough log and freeze for 30 minutes, or chill overnight.
  6. Preheat oven to 325℉. Slice dough into ¼-inch slices. Place on a lined baking sheet.
  7. Bake for 16-18 minutes or until edges of cookies are golden. Rotate the cookie sheet halfway through baking.
  8. Remove cookies from the oven and chill in refrigerator for 15-20 minutes.
  9. In a small bowl, microwave the chocolate chips for 30 second increments until fully melted.
  10. Dip cookies halfway in melted chocolate and set onto a lined cookie sheet. Let chocolate firm up and dust with additional matcha if desired.
  11. Store in an airtight container at room temperature for up to 3 days.
