Harvest Bowl with Misfit Foods Sausages

This hearty and healthy harvest bowl is the perfect weeknight meal that you can make entirely with ingredients from your Imperfect box. The Misfit Foods sausages featured in this recipe are made with 50% humanely-raised chicken and 50% delicious veggies you love like sweet potato, kale, and squash. They’re a great option for folks looking to cut down on their meat consumption while still getting enough protein or those that are just looking to sneak in a few extra servings of vegetables to their meals. We hope you’ll adapt this harvest bowl to your favorite ingredients or use it to help prevent leftovers from going to waste.

Ingredients

  • ½ c quick-cooking brown rice
  • 1 c vegetable broth
  • 1 Tbsp olive oil
  • Misfit Foods sausages
  • 2 handfuls green beans
  • Kosher salt
  • Freshly ground black pepper
  • 1 Tbsp sriracha hot chili sauce
  • Cilantro

Instructions

  1. First, cook your rice. Add ½ cup quick-cooking brown rice and 1 cup vegetable broth to a pot and bring to a boil. Then reduce the heat to a simmer and cook, covered for 25-30 minutes until the rice is done.
  2. Next, cook the sausage. Heat 1 tbsp olive oil in large pan or skillet over medium high heat. Chop the sausage into half inch bite-size pieces and cook until slightly browned, remembering to stir and flip often.
  3. Now, cook your green beans. Bring a pot of well salted water to a boil and cook green beans until they’re bright green and tender crisp, roughly 2 minutes. Drain and shock in ice water to stop cooking.
  4. Finally, assemble your bowls. Add rice to bowl, followed by sausages and green beans.  Salt and pepper to taste. Drizzle sriracha and garnish with loosely chopped cilantro.

Recipe Notes and Variations

  • While it’s not strictly necessary, we recommend rinsing your rice until the water runs clear before cooking it. This removes the excess surface starch, resulting in fluffier, less gluey rice.
  • Try adding roughly chopped toasted almonds to your harvest bowl for extra protein and a nutty crunch.
