Longevity Noodles for Lunar New Year

Longevity noodles are one of the most popular dishes enjoyed during the Lunar New Year. Traditionally, the dish was prepared as a single very long noodle in broth or sauce to symbolize a long life and bring you luck in the coming year. But nowadays, they’re typically just rather long ramen or rice noodles. With pan-fried shiitake mushrooms and green onions, this dish is best eaten fresh- although we doubt you’ll have an issue with leftovers 

Makes 4 servings

Ingredients

  • 3 quarts water
  • 1 package Imperfect Foods Organic Rice Noodles
  • ⅛ tsp sugar
  • ¼ tsp salt
  • 4 tsp soy sauce
  • 2 tbsp oyster sauce
  • ½ tsp sesame oil
  • 3 – 4 tbsp neutral oil
  • 5 shiitake mushrooms, thinly sliced
  • 1 cup green onion, cut into 2-inch long pieces (divide light and dark parts)
  •  Salt and pepper to taste

Instructions

  1. Boil 3 quarts of water in a large wok or pot. Once boiling, cook the noodles for 4-5 minutes. (The directions on the package say to boil for 5-8 minutes, but for this recipe, we want to keep the noodles firm at this stage.) Drain the noodles, but reserve ¼ cup hot noodle water.
  2. Dissolve the sugar and ¼ tsp salt in 1 tbsp of hot noodle water. Add soy sauce, oyster sauce and sesame oil to the water. Stir to combine and set aside.
  3. Heat the wok over medium-high heat and spread 2 tbsp oil around the sides of the wok.
  4. Add the mushrooms and the light parts of the green onions and stir fry for 30 seconds. Add more oil if mushrooms look dry.
  5. Add noodles and stir fry everything for about 20 seconds.
  6. Pour prepared sauce evenly over the noodles and gently stir fry everything together for 1 minute, or until sauce is distributed throughout. Stir carefully so you don’t break up the noodles — long noodles symbolize longevity and prosperity! Add additional oil around the wok (or pot) to prevent sticking, if needed. If the noodles are looking too dry, add splashes of hot water while stirring.
  7. Add in the green parts of the green onions and mix until they turn bright green and the noodles are heated throughout, about 1-3 minutes.

Recipe Notes and Variations

  • Oyster sauce adds a tangy savoriness to this dish, but feel free to leave it out if you’re a vegetarian.
