Flower Power Bento Box Lunch: Almond Butter & Jelly Sandwich

Don’t be fooled by how adorable this kid-friendly Flower Power Bento Box Lunch is. It was seriously easy to prepare. It’s amazing how far a few sprinkles and a cookie-cutter can get you when you’ve got a picky eater on your hands. Even as an adult, the irresistible charms of rainbow sprinkles could convince us to eat anything.

Serves 1-2

1-2 Servings

Ingredients

  • 4 2 slices Imperfect Foods Whole Wheat Sliced Bread
  • 1-2 tbsp Imperfect Foods Almond Butter
  • 1-2 tbsp jam
  • 2 slices cheese, either cheddar or Monterey or both
  • 1 handful crackers
  • 1 handful of sugar snap peas
  • 1 slice melon of choice
  • 1 small handful of blueberries
  • Rainbow sprinkles, if desired

Materials

  • 1 large flower-shaped cookie cutter
  • 1 small flower-shaped cookie cutter
  • 1 bento box, or lunch box with dividers
  • edible flowers, if desired

Directions

  1. Make the sandwiches. Use the large flower-shaped cookie cutter to cut a flower shape out of the four slices of bread. Spread the almond butter on two slices of bread then spread jam over the top. Use the small flower cutter to cut a small flower shape out of the middle of the other two flower-shaped bread slices. Press these into the uncut slices with jam and almond butter on them. Add sprinkles to the jammy tops if desired.
  2. Use the small flower cookie cutter to cut flowers out of the cheese slices and the melon.
  3. Assemble the bento box. Arrange the flower sandwiches in the largest section of the bento box. Place the snap peas in one section and top with an edible flower, if using. Layer the crackers and cheese in a pattern and place them in another section. Place the flower melons in another section and top with blueberries.

Recipe Notes and Variations

  • As any parent knows, the leftover scraps of your kid’s food make up about 75% of your diet. While that’s great for food waste, if you want to make the leftover pieces of bread a little more interesting, we recommend toasting them and dipping them in hummus.
  • Any leftovers from the cutout shapes of fruit can also be chopped up and added to a very adult salad.
