Upcycled Cocktails with Spare Tonic

Our friends at The Spare Food Co. know that reducing food waste can also be fun. And what better way to make an impact than with a few celebratory New Year’s Eve drinks? Spare incorporates upcycled whey into their probiotic bubbly beverages, which, at first glance seems unusual, but at first sip we’re sold. All of their upcycled whey comes from artisanal, small batch yogurt producer The White Moustache in Red Hook, Brooklyn. Grab a few cans next time you’re shopping with Imperfect and be sure to try out a few of these uncommonly delicious bubbly drinks. 

Recipes from Spare Food

The Amaro Spritz

Makes 1 drink

Ingredients

  • 2 oz amaro (use any lighter style of amaro)
  • 1 oz club soda
  • 1 oz Blueberry & Ginger Spare Tonic
  • Squeeze of grapefruit

Directions

  1. Fill a tall glass with ice.
  2. Add amaro, club soda, and a squeeze of grapefruit.
  3. Top off with Blueberry & Ginger Spare Tonic and stir.

The Cyan Smash

Makes 1 drink

Ingredients

  • 1½ oz bourbon⁠
  • 10 basil leaves (ripped)⁠
  • 1 oz lemon juice⁠
  • ½ oz honey syrup⁠
  • ½ oz pineapple amaro⁠
  • 2 oz Blueberry & Ginger Spare Tonic⁠

Directions (If you have a cocktail shaker)

  1. Fill a tall glass with ice.
  2. Combine all the ingredients except the Spare Tonic in a cocktail shaker.
  3. Shake and strain into your glass with ice.⁠
  4. Top off with 2 oz Blueberry & Ginger Spare Tonic and garnish with fresh basil.⁠

Directions (If you don’t have a cocktail shaker)

  1. Fill a tall glass with ice.
  2. Combine all the ingredients except the Spare Tonic in a container with a tight lid. A mason jar would work perfectly and a tightly sealed Tupperware would work in a pinch.
  3. Place a mesh strainer over your glass with ice.
  4. Shake the mason jar with the lid on and into your glass with ice.⁠ Your strainer should catch all the large pieces of basil.
  5. Top off with 2 oz Blueberry & Ginger Spare Tonic and garnish with fresh basil.⁠

Citrus Groove – Non-Alcoholic

Makes 1 drink

Ingredients

  • 1 cup of water
  • Zest of 1 grapefruit
  • Zest of one lemon
  • Zest of one orange
  • 3 oz Lemon & Ginger Spare Tonic

Direction

  1. Make the non-alcoholic citrus infusion by adding one cup of water to a pot.
  2. Add the zest of one grapefruit, lemon, and orange to the water and bring to a boil.
  3. Let the infusion boil for 5 minutes and then take it off the heat. Strain and let cool.
  4. Once cool, pour into a tall glass and top off with Lemon & Ginger Spare Tonic and finish with a wedge of lemon
