Mother’s Day Brunch Recipes She Won’t Suspect Were So Easy

In case she didn’t already remind you– Mother’s Day is coming up! So we’re sharing some of our favorite mom-approved Mother’s Day brunch recipes to help celebrate the day. And if we’re speaking directly to mom right now, feel free to nudge whoever is cooking in the direction of these ideas.

Breakfast & Brunch

Warm Cinnamon Bread Pudding in Bourbon Sauce

After a dip in an orange-infused bourbon bath, slightly stale Cinnamon Bread reemerges as a delicious bread pudding worthy of a decadent breakfast or dessert. Some things just get better with age. And with bourbon.

Puffed Apple Pancake

Pancakes are a Mother’s Day breakfast classic. But if you’re looking for something a little more original, something that’s filling and more nutritionally complex than what is literally “a cake made on a pan,” try this Puffed Apple Pancake.

Flourless Banana Chocolate Chip Breakfast Muffins

Maybe mom doesn’t want a mouthful of syrup first thing in the morning. These muffins are healthy but not too healthy, free of flour, easy to make vegan, and taste amazing with fresh coffee.

Cinnamon French Toast

For the mom who just wants a lazy Sunday and a simple but delicious breakfast.

Classic Shakshuka

For the mom who’s more of a savory breakfast person or the one who needs fuel for an ambitious hike afterwards.

Take-Two Lemon Loaf

For the mom who likes her breakfast like she likes her atmosphere: low carbon.

Treats & Chocolate

4 Ingredient Chocolate Truffles

A decadent treat that is actually surprisingly simple to make. This recipe only requires four ingredients but makes for an indulgent dessert after an epic Mother’s Day brunch or a fun homemade gift.

5 Ingredient Almond Butter Cookies from Half Baked Harvest

If baking isn’t your thing, but you still want to impress mom, these flourless and five-ingredient almond butter cookies are for you. They come together in under 20 minutes but taste like they took at least an hour.

Carrot Cake Cookies

These cookies from Katie Olsen are easy as pie (or cake) to make. It’s mom’s favorite but made bite-sized, which means she’ll have plenty of room for all the other delicious foods the day calls for.

Swirly Chocolate Bark with Cookie Crumbles

If mom likes chocolate and mom likes cookies, then it doesn’t take a genius to deduce that mom might like this Swirly Chocolate Bark with Cookie Crumbles. With supervision, even little ones could make this treat happen.

Drinks

Refreshing Strawberry Basil Lemonade

In case mom needs something to sip on between courses.

I love your Co and what you are doing for our planet, that said, I have some issues with your packers. This week 4 of my eggs were broken and the top of my creamer container so badly bent up the I had to use pliers to open. It only takes a moment to pack fragile items correctly. I understand that items shift during transport but think your Co can do better ????
