Our Alfajores Cookies consist of dulce de leche sandwiched between two buttery shortbreads. We added some fresh rosemary to the shortbread dough to add a little extra kick of flavor to these classic Spanish cookies. Our photographer John said these cookies were the absolute best thing he’s eaten at Imperfect! We eat a lot of cookies here, so that says a lot.
Be sure to save any leftover rosemary sprigs for a deliciously herby infused olive oil or this all-purpose spray.

We made these cookies tonight and WOW! Delicious! We ended up baking the cookies for 9 minutes – 8 minutes left them a little doughy. Great recipe!

First time making these savory cookies and unfortunately they didn’t work out. Despite my better judgement, I let them cool completely on the baking sheet as per instructions, but they stuck like glue. Instead of 58 sandwich cookies I have 12 with a pile of crumbles. Next time I’ll bake them on pans lined with parchment paper.
Oh no, we’re so sorry to hear that they stuck to the sheet. Parchment paper is a really good tip for these for sure!
I tried this recipe and have a couple comments. First, be sure to grease your baking sheets. This wasn’t made explicit in the instructions and left me with a lot of broken cookies. Second, my cookies were not completely cooked at 8 minutes when 1/4″ thick. I recommend 10-12 min.

These were super popular this holiday! Used parchment paper on the baking sheet, cuz these tend to stick. Made into fun xmas 🎄 shapes.
