Artichoke and Chickpea Dip with Dukkah

This Artichoke and Chickpea Dip with Dukkah is a flavorful and healthy riff on two classics– hummus and artichoke dip. I love adding depth to the dip by using garlic scapes and the entire scallion. I kept it true to its Middle Eastern flavor profile by pairing it with Dukkah- an Egyptian spice blend made up of chopped nuts, seeds, and spice– but in a pinch, store-bought Za’atar would be delicious as well. Serve with sliced radishes and your choice of crackers for a delicious snack!

Ingredients

For the Artichoke Hummus

  • 40g artichoke hearts, (about four large globe artichokes)
  • 2 whole scallions, ends trimmed and roughly chopped
  • 2 whole garlic scapes, ends trimmed and roughly chopped
  • 1/2 can chickpeas
  • 2 tbsp tahini
  • 1 tbsp dukkah
  • 1.5 tbsp lemon juice
  • 3 tbsp olive oil
  • 3/4 tsp salt, or to taste
  • 1/4 tsp black pepper

For the Dukkah

  • 1 tbsp cumin seeds
  • 2 tsp coriander seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp nigella seeds
  • 1/4 tsp caraway seeds
  • 2 tbsp sesame seeds
  • 1/4 cup pistachios, roughly chopped
  • 2 tbsp hazelnuts, roughly chopped

For serving

  • Olive oil for drizzling
  • 1 bunch radishes
  • 1 pack of Crackers

Directions

  1. Begin with your artichokes. Prepare them according to your preferred method in order to get to the artichoke hearts. I use this process from The Kitchn.
  2. Steam your artichoke hearts until a knife goes easily through them, about 10 minutes.
  3. While the artichoke hearts are steaming, add your scallions and garlic scapes to the bowl of a large food processor and pulse until they are minced. Add in the artichoke hearts and the remaining ingredients to the bowl and puree until you get a smooth dip. Add more olive oil if the dip is dry.
  4. Make your Dukkah by grinding together the cumin, coriander, fennel, nigella, and caraway seeds into a medium-fine powder. Transfer to a bowl and mix together with the sesame seeds and the chopped pistachios and hazelnuts.
  5. Serve your Artichoke and Chickpea Dip in a bowl and drizzle with a healthy glug of olive oil over the top. Sprinkle with more Dukkah and serve with your choice of crackers and some sliced radishes. I used Wheat Table Crackers for a delicious pairing.

Recipe Notes & Variations

  • Feel free to substitute the 2 whole garlic scapes for 1 clove garlic and 3 stalks of Chinese chives.
  • The Dukkah spice blend can be made as mentioned above in a chunkier blend. Or, the nuts and sesame seeds can be pureed with the spices for a more powdery spice blend that will still be super flavorful. You can also use your favorite store-bought Dukkah, or use Za’atar.
