Nona Lim’s Cheesy Miso Ramen Recipe

Cheesy, buttery, noodly, and mushroomy– it’s not the ramen recipe you knew you wanted, but it is the one you need. This unique and inventive ramen recipe from Nona Lim brings two classic comfort foods– ramen and fettuccine alfredo– together for a cozy night in.

Ingredients

  • 1 box of Nona Lim Traditional Ramen Noodles
  • 2 cups of Nona Lim Miso Ramen Broth
  • 2 tsp olive oil
  • 4 asparagus spears
  • 2 tbsp butter
  • 3 oz sliced shiitake mushrooms
  • ½ shallot, sliced
  • 3 cloves garlic, minced
  • ½ cup peas, thawed if frozen
  • 1 cup grated Pecorino Romano and/or Parmesan cheese
  • Salt and pepper to taste
  • Fresh herbs of your choice, for serving

Directions

  1. Prep the vegetables. Mince the garlic, and shallots. Then slice the shitake mushrooms lengthwise, or leave whole if they’re small. Prep the asparagus buy shopping off the tough bottom part of the stem.
  2. Add 1 tsp of olive oil and ½ tbsp of butter in a skillet and heat over medium-high heat until oil is shimmering.
  3. Add asparagus and saute for 3-4 minutes, or until cooked through. Remove asparagus and set aside. Meanwhile, start a pot of water boiling for cooking the Traditional Ramen.
  4. Add 1 tbsp butter and mushrooms to the same skillet that asparagus was cooked in and saute until they are fully cooked through and slightly crispy. Then add the remaining 1 tbsp of butter, shallots, garlic, asparagus and peas. Saute for one minute. Adjust heat to low and add Nona Lim Miso Ramen broth to skillet and scrape up any bits on the bottom.
  5. Add Nona Lim Traditional Ramen to the boiling water in the pot for 1.5 minutes, reserving ½ cup of pasta water when the noodles are done. Use less if you prefer your sauce thicker.
  6. Using tongs, transfer ramen noodles to the skillet with the rest of the ingredients, bring to a simmer. Turn off heat while tossing and coating the noodles until ramen is al dente and the sauce has slightly thickened, about 2 minutes.
  7. Remove skillet from heat, season with salt and pepper to taste and add chopped herbs.

Recipe Notes and Variations

  • If the sauce is a bit runny, add more cheese and heat until liquid has evaporated enough
  • If noodles need more sauce, add a bit more pasta cooking water or Miso Ramen Broth.
